What separates one loaf from another is mostly how much of the wheat grain is still in it.
Stage by stage
- Intake (Chewing and salivary amylase): Chewing breaks the crumb down and salivary amylase begins converting starch to sugar.
- Stomach (Gastric emptying rate): Fibre, intact grain particles and sourdough acids all slow emptying; a fine white crumb leaves quickly.
- Small intestine (Starch to glucose): Starch is hydrolysed to glucose and absorbed; bran fibre passes through untouched.
- Colon and tissues (Fermentation and energy use): Fibre is fermented to short-chain fatty acids while the absorbed glucose is used or stored.
Time to effect
- Under an hour: Blood glucose rises within roughly 30 to 60 minutes, flatter and later for dense wholegrain and sourdough loaves.

Food vs. supplement
There is no supplement version of bread, and the comparison worth making is within the family rather than against a pill. Moving from a white loaf to a genuine wholegrain one adds several grams of fibre a day and a useful amount of magnesium and manganese; a fibre supplement adds the fibre alone. Note the reverse case too: fortified white flour is a deliberate public-health folate delivery system, and the artisan or organic loaf that feels like an upgrade quietly drops it.
Kitchen tip
Buy the loaf with visible intact grains rather than the one that is simply brown. Freezing bread and toasting it from frozen retrogrades a little of the starch into a resistant form and lowers the glycaemic response slightly — a small effect, but free.
Common myth
“Brown bread is wholemeal bread.” In reality: Colour is not a guide. Many brown loaves are white flour darkened with caramel or molasses and given a little bran back. Only wholemeal and wholegrain describe flour with the bran and germ still present, and only those loaves carry the fibre and mineral load people are buying brown bread for.
