Bun
Food · Grain · Food, Typed Supps
A sweet bread. Most of the difference across the three is the icing on top.
Stage by stage
- Intake (Soft enriched crumb): The tender crumb needs little chewing; salivary amylase begins on the starch.
- Stomach (Fat slows emptying): Fat and egg in the enriched dough delay gastric emptying compared with plain bread.
- Small intestine (Sugar absorbed quickly): Icing sucrose and free fruit sugars absorb rapidly; starch is digested over a longer window.
- Bloodstream (Insulin response and storage): With little fibre or protein to blunt it, the glucose load drives a brisk insulin response.
Time to effect
- Under an hour: Blood glucose rises within roughly 30 to 45 minutes of eating.

Food vs. supplement
Not applicable. This is a bakery treat, and the useful comparison is with other sweet bakes rather than with any nutrient it supplies. Within the family, the uniced bun is the one meaningful step down in free sugar.
Kitchen tip
Toasting and buttering an uniced bun gets most of the eating experience of the iced one, with the sugar coming from the fruit rather than the glaze. If you are splitting a packet across a week, freeze them — the enriched crumb stales quickly.
Common myth
“A fruit bun is basically fruit bread, so it counts as a healthier bake.” In reality: The dried fruit contributes fibre and a little potassium, but it is also a concentrated sugar source, and the dough around it is enriched with fat and sugar before anything is added on top. This is a sweet bake that happens to contain fruit, and the honest comparison is with other sweet bakes.
