The nitrate that lowers blood pressure survives the tin. Some of it, anyway.

- Further reduction (Stomach): Nitrite is converted onward to nitric oxide in the acidic stomach.
- Vasodilation (Blood vessels): Nitric oxide relaxes vessel walls, lowering pressure modestly for a few hours.
- Brine sodium (Systemic): 220 mg per 100 g from the canning brine, which works against the point.
What the evidence supports
- Lowering blood pressure — moderate evidence. Dietary nitrate acts through the enterosalivary pathway — oral bacteria reduce nitrate to nitrite, then to nitric oxide. Effects are modest, peak around 2–3 hours, and most trials used concentrated juice at doses above a serve of the vegetable.
- Evidence that it causes Cancer risk from vegetable nitrate — insufficient evidence. Reassuring. Vegetable nitrate and processed-meat nitrite behave differently: vegetables carry vitamin C and polyphenols that block nitrosamine formation, and the epidemiology runs in opposite directions.
Timing
Effects peak around two to three hours after eating. Avoid antibacterial mouthwash in that window, because it removes the mechanism.

- 2–3 hrs: Peak blood pressure effect after a nitrate load.
- Regular intake: Sustained benefit requires repetition rather than one serve.

Food vs. supplement
Beetroot is one of the few foods whose benefit depends on your own microbiome — kill the bacteria on your tongue and the effect disappears entirely. It is a rare, clean demonstration that a nutrient and its effect are not the same thing.

Skip the mouthwash on days you are relying on it. The bacteria it kills are the ones that make the nitrate work.
Common myth
“Nitrates are bad for you — they’re why processed meat causes cancer.” In reality: The nitrate in vegetables and the nitrite curing salts in processed meat behave differently, and the epidemiology runs in opposite directions: vegetable nitrate is associated with lower blood pressure, while processed meat is a Group 1 carcinogen. Context and companion compounds are what differ — vegetables carry vitamin C and polyphenols that block the formation of the harmful nitrosamines.
