Einkorn is one of the oldest kinds of wheat, barely changed since ancient farmers first grew it. It has more protein than regular wheat, but don't be fooled — it still has gluten.

Food vs. supplement
Einkorn's benefits come from the intact whole grain — its fiber, protein, and carotenoid content acting together — not from any isolated wheat-derived supplement, and no einkorn-specific supplement exists on the market.
Kitchen tip
Because its gluten is weaker and more water-soluble than modern wheat's, einkorn flour needs less liquid and gentler mixing — over-hydrating or over-kneading produces a dense, gummy result.
Common myth
"Einkorn wheat is gluten-free and safe for people with celiac disease." In reality: Einkorn contains gliadin and glutenin gluten proteins and is not safe for celiac disease; its gluten structure differs from modern bread wheat, which may make it easier to tolerate for some people with non-celiac wheat sensitivity, but it is not a validated celiac-safe substitute.
