Fenugreek Seed
Food · Pantry & Condiment · Food, Typed Supps
A spice, not a food. The impressive iron and fibre numbers shrink to almost nothing at the teaspoon you actually use.
Stage by stage
- Intake (Mouth): Grinding, toasting or sprouting breaks the hard seed coat; whole seeds otherwise pass largely intact.
- Hydration (Stomach): Galactomannan soluble fibre swells into a viscous gel and slows gastric emptying.
- Absorption (Small intestine): Viscosity blunts the rise in blood glucose; non-heme iron absorbs poorly from the phytate-rich seed.
- Systemic (Circulation): Sotolon and other aroma compounds circulate and are excreted, producing the characteristic maple smell at high intakes.
Time to effect
- Within a meal: Fibre viscosity acts on the glucose from the meal it is eaten with.
Allergens
None of the fourteen major allergens. Derived from what this food is, not from a product label.
Eating patterns
Fits: Vegan, Vegetarian, Pescatarian, Halal, Kosher, Keto, Gluten-free. Depends on the product: Low-FODMAP.
Satiety
Not scored: the satiety index is measured on 240 kcal servings, and nobody eats a 240 kcal serving of this. The question does not apply rather than the answer being unknown.
Cost band
Mid — roughly £5 per kg, as a band midpoint rather than a price.

Food vs. supplement
This is one of the few cases where the supplement genuinely differs from the food. Culinary fenugreek is a flavouring; the blood glucose research uses gram-level doses of powder or standardised extract. If the goal is the studied effect, the spice rack will not deliver it, and the supplement dose comes with a real interaction risk for anyone on glucose-lowering medication.
Kitchen tip
Toast the seeds briefly in a dry pan before grinding. Over-toasting turns the bitterness harsh rather than nutty, and the window is short. Soaking overnight softens the seeds and reduces bitterness for dishes where they are used whole.
Common myth
"Fenugreek is a rich source of iron and fibre." In reality: It is, by weight, and by weight it is irrelevant. A teaspoon is around 4g. The realistic contribution is a couple of grams of fibre and a little poorly absorbed non-heme iron.
