Food vs. supplement
The two problems here have two separate solutions, which is unusual and useful: air-dried noodles fix the fat, and half a sachet fixes the sodium. Doing one does nothing about the other.

Common myth
“I throw away half the flavour sachet, so it’s fine.” In reality: That genuinely halves the sodium, which is the biggest single problem — around 940 mg per packet otherwise. It does nothing about the fat, because the noodles themselves were deep-fried to dehydrate them: 19.1 g per 100 g, with 8.35 g saturated, before the sachet is opened. Air-dried instant noodles skip that step and keep the convenience.
