Food vs. supplement
A cup of cooked kidney beans supplies about 3.9mg non-heme iron (21% DV) and 11–13g fibre — the iron absorbs less easily than a supplement, but pairing beans with vitamin C narrows much of that gap without the constipation iron pills often cause.
Kitchen tip
From dry, boil at a full rolling boil for at least 10 minutes — a slow cooker alone may not get hot enough. Canned kidney beans are pre-cooked and safe as-is.
Common myth
“The raw kidney bean toxin thing is exaggerated.” In reality: It’s a genuine, FDA-documented hazard — as few as four or five raw beans can cause severe vomiting within hours — not folklore. Proper boiling for at least 10 minutes fully neutralizes it, and canned beans are already safely cooked.
