Food vs. supplement
The dairy calcium comes packaged with protein, phosphorus, iodine and B12, which a calcium tablet does not supply. The catch is dose: a large serve is about a fifth of a day's calcium, not a substitute for a supplement where one is indicated.
Kitchen tip
Use less of a sharper cheese: sodium and saturated fat both track the cheese quantity, so one change moves both. Browning under the grill develops flavour through the Maillard reaction without adding fat.
Common myth
"Macaroni cheese is junk food." In reality: The homemade version is a milk-based sauce over pasta: 6.4g protein, 79mg calcium and 59mg sodium per 100g. Boxed mixes and restaurant plates earn the reputation through much higher salt and cheese loads — the dish itself is whatever the recipe makes it.
