Food vs. supplement
Fat-free dressing is the counterproductive choice on a salad: trials show it substantially reduces absorption of the carotenoids you ate the vegetables for.
Kitchen tip
Use full-fat and use less, rather than fat-free and more — the fat is what gets the carotenoids out of the vegetables.
Common myth
“Fat-free dressing is the healthier choice on a salad.” In reality: Controlled trials show salads eaten with fat-free dressing deliver markedly less lutein, lycopene and beta-carotene — the fat is what dissolves them into a form the gut can take up. A small amount of full-fat dressing beats a generous amount of fat-free.
