Food vs. supplement
As an iron source, 100g supplies 1.7mg of heme iron, which is absorbed several times more efficiently than the non-heme iron in a standard supplement and without the constipation that often ends supplement courses. It is a smaller dose delivered better, alongside zinc and B12 that an iron tablet does not provide.
Kitchen tip
Making them at home is the only lever that moves the sodium. Plain mince, fresh breadcrumb soaked in milk and an egg give the same binding, and the salt then becomes a seasoning decision rather than a manufacturing one.
Common myth
“A rissole is just mince in a different shape.” In reality: It is mince with roughly a fifth of the protein displaced by filler and around nine times the sodium. The meat is the same; the product is not.
