Kitchen tip
Cook the batter soon after mixing. Chemical leavening releases its carbon dioxide as soon as it hydrates, so standing batter loses lift and the pikelets come out flat.
Common myth
“A plain pikelet has hardly any salt in it.” In reality: A commercial one carries around 359mg of sodium per 100g, and it comes from the bicarbonate raising agents rather than from seasoning — so it is there whether the pikelet tastes salty or not.
