Rice Paper Wrapper

A thin sheet of rice and tapioca starch. It adds almost nothing to a roll except the ability to hold it together.

- Intake (Rehydrated, not cooked): Soaking makes the pre-gelatinised sheet pliable; no cooking and no added fat are involved.
- Stomach (Negligible mass): A single wrapper weighs around ten grams, so it barely affects gastric emptying either way.
- Small intestine (Fast starch hydrolysis): Rice and tapioca starch are hydrolysed quickly with no fibre or fat to slow absorption.
- Whole meal (Filling supplies the nutrition): Protein, vegetables and herbs inside the roll account for essentially all of its nutritional value.

Kitchen tip
Use warm rather than hot water and pull the sheet out while it still feels slightly stiff — it keeps softening on the bench, and a fully softened wrapper tears as you roll. Work on a damp cloth, not a dry board.
Common myth
“Rice paper rolls are the healthy version of spring rolls.” In reality: The wrapper genuinely is — it is rehydrated rather than fried, so it absorbs no oil, which is the real difference from wheat spring roll pastry. But the finished dish is only as light as its filling and its sauce, and a generous peanut sauce can outweigh everything it is dipped in.
