Sesame oil isn't magic, but it's a genuinely different kind of fat thanks to plant compounds most cooking oils don't have.

- Consumption (Mouth & Stomach): Sesame oil is swallowed as a liquid fat, requiring no chewing, and begins mixing with stomach acid and lipase enzymes almost immediately.
- Digestion (Stomach): In the stomach, gastric lipase breaks down a small fraction of the triglycerides while bile release is triggered in preparation for the small intestine.
- Absorption (Small Intestine): In the small intestine, bile emulsifies the fat into micelles so pancreatic lipase can split triglycerides into fatty acids and monoglycerides that intestinal cells absorb, while lignans like sesamin are partly metabolized by gut microbes and liver enzymes.
- Circulation & Use (Liver & Bloodstream): Absorbed fatty acids are packaged into chylomicrons, transported through the lymph into the bloodstream, and used for energy or cell membranes or stored as fat, while circulating lignan metabolites contribute modest antioxidant activity.
Timing
Sesame oil is a fat, so it's best consumed with meals, which slows digestion and supports absorption of its fat-soluble compounds.

- Weeks: Any modest cholesterol or blood-pressure benefit seen in clinical studies took several weeks of regular use as part of the diet, not a single dose, to appear.

Food vs. supplement
Whole sesame oil delivers its lignans (sesamin, sesamolin, sesamol) alongside monounsaturated and polyunsaturated fats and vitamin E, a combination that isolated lignan supplements don't replicate.
Kitchen tip
Use light/refined sesame oil for high-heat cooking and save fragrant toasted (dark) sesame oil for finishing dishes off the heat, since its flavor compounds and lignans degrade with prolonged high temperatures.
Common myth
"Sesame oil is a natural cure that lowers blood pressure and cholesterol on its own." In reality: Small clinical trials have found modest lipid and blood-pressure improvements when sesame oil replaces other cooking fats, but it is not a stand-alone treatment and reported effect sizes are limited.
