Food vs. supplement

Common myth
"Soba noodles are gluten-free because they're made from buckwheat." In reality: Buckwheat itself is a gluten-free pseudocereal, but most commercial soba (nihachi-style) is milled with roughly 20% or more wheat flour for binding and texture, so it contains gluten unless the package specifies 100% buckwheat (juwari); even juwari soba can carry cross-contact risk if processed on shared wheat equipment.
