Tahini
Food · Fat & Oil · Food, Typed Supps
Tahini is sesame seeds ground into a creamy paste — a good source of calcium, copper, and healthy fats, but your body only absorbs part of that calcium, and sesame itself can trigger allergies.
Stage by stage
- Chewing & Blending (Mouth): Chewing spreads tahini's already-smooth oil-and-seed-solid paste, exposing its fat and protein to digestion right away.
- Fat Breakdown Begins (Stomach): Stomach acid and enzymes begin breaking down tahini's protein and start hydrolyzing a portion of its fat.
- Absorption (Small Intestine): In the small intestine, bile emulsifies the remaining fat for absorption, while calcium, copper, iron, and phosphorus are absorbed alongside it, partly limited by sesame's natural phytates and oxalates.
- Mineral & Lipid Use (Bone & Tissues): Absorbed fats join cell membranes, sesame lignans act as antioxidant compounds, and the usable share of calcium, phosphorus, and copper supports bone structure and enzyme function.
Timing
Eating tahini alongside vitamin-C-rich foods, like lemon juice in hummus, helps offset its phytates' inhibition of non-heme iron absorption.
Time to effect
- Hours to weeks: Satiety and fat digestion begin within 1 to 3 hours of eating tahini, while measurable contributions to bone or heart health from regular intake accumulate over several weeks.
Allergens
Contains: Sesame. Derived from what this food is, not from a product label.
Eating patterns
Fits: Vegan, Vegetarian, Pescatarian, Halal, Kosher, Keto, Gluten-free. Depends on the product: Low-FODMAP.
Satiety
70 on the satiety index, where white bread is 100 — low. Modelled from the Holt et al. (1995) measurements.
Environmental footprint
0.4 kg CO2e and 4134 litres of freshwater per kg, matched to "Nuts" in Poore & Nemecek (2018), Science 360.
Cost band
Pricey — roughly £12 per kg, as a band midpoint rather than a price.

Food vs. supplement
Tahini supplies calcium, copper, and healthy fats bundled with fiber and lignans, but its oxalate and phytate content lowers real-world mineral absorption compared with a purified supplement or a low-oxalate source like dairy.
Kitchen tip
Stir tahini thoroughly before each use since its natural oils separate on top, and refrigerate opened jars to slow rancidity of its polyunsaturated fat content.
Common myth
"Tahini is a safe substitute for peanut or tree-nut butter because it's seed-based, not nut-based." In reality: Sesame itself became the FDA's ninth major recognized food allergen on January 1, 2023, affecting an estimated 1.5 million-plus people in the U.S., so tahini is not automatically a safe swap for someone with a food allergy — it carries its own distinct allergen risk.
