Food vs. supplement

If you are cutting sugar in a recipe, add extra vanilla. The aroma reads as sweetness, and you can usually take out more sugar than you expect.
Common myth
“Real vanilla extract is better for you than the imitation.” In reality: The vanillin molecule is identical in both. Real extract carries several hundred additional aroma compounds that make it taste more complex, which is a genuine culinary difference and not a nutritional one — at a teaspoon, neither contributes anything measurable. Buy the real one because it tastes better, which is a good enough reason on its own.
