Veal
Food · Protein · Food, Typed Supps
Very lean meat from a young animal. It cooks fast and dries out fast.
Stage by stage
- Intake (Chewing breaks the fibres): Fine muscle fibres break down with less chewing than beef requires.
- Stomach (Protein denatured): Acid and pepsin unwind and begin cleaving the muscle protein.
- Small intestine (Amino acids and heme iron absorbed): Peptides are reduced to amino acids; heme iron absorbs through its own dedicated route.
- Muscle and marrow (Repair and red cell production): Amino acids drive muscle protein synthesis while B12 and iron support red blood cell formation.
Time to effect
- Hours: Amino acids reach the blood within an hour and support muscle repair for several hours afterwards.
Allergens
None of the fourteen major allergens. Derived from what this food is, not from a product label.
Eating patterns
Fits: Keto, Gluten-free. Depends on the product: Halal, Kosher, Low-FODMAP.
Satiety
211 on the satiety index, where white bread is 100 — very high. Modelled from the Holt et al. (1995) measurements.
Environmental footprint
99.5 kg CO2e and 1451 litres of freshwater per kg, matched to "Beef (beef herd)" in Poore & Nemecek (2018), Science 360.
Cost band
Pricey — roughly £22 per kg, as a band midpoint rather than a price.

Food vs. supplement
There is no supplement equivalent to a piece of veal. Isolated protein powders match the amino acids but not the heme iron, zinc, B12 and niacin that come with the muscle. Where veal is genuinely weaker than the alternative is iron: if the goal is raising iron stores, beef or lamb carries around three times as much per serving.
Kitchen tip
The whole family cooks by the same rule: fast and to a lower final temperature than beef. There is no marbling to render, so any heat held past the point where the protein sets squeezes out water and leaves the meat dry and grainy. Cutlets and leg steaks want a hot pan and a short time; diced veal is the exception, because a long wet braise dissolves the connective tissue instead of drying the muscle.
Common myth
"Veal is white meat, like chicken." In reality: Veal is red meat. Its pale colour reflects the low myoglobin of a young animal, not a different category of meat, and both dietary guidelines and the IARC classification treat it as red meat.
