The embryo of the wheat seed — small, oily, and the richest part of the grain in vitamins and minerals.

- Intake (Soft flakes): Little chewing required; wheat germ is usually stirred into another food rather than eaten alone.
- Digestion (Oil and protein): The germ's polyunsaturated oil and its unusually high protein content digest normally.
- Absorption (Phytate limits minerals): Vitamin E and B vitamins absorb well; iron and zinc absorption is constrained by phytate in the same food.
- Tissues (Vitamin E in membranes): Alpha-tocopherol distributes into cell membranes, where it interrupts lipid oxidation chains.

Food vs. supplement
Vitamin E capsules deliver alpha-tocopherol alone, and high-dose trials have been disappointing to negative. Wheat germ supplies it at food doses with protein, fibre, folate, magnesium and zinc attached.
Kitchen tip
Keep wheat germ in the freezer and buy it in small quantities. The polyunsaturated oil that makes it valuable is also what makes it go off.
Common myth
"Wheat germ and wheat bran are basically the same wholegrain add-in." In reality: They are different parts of the kernel with different jobs. Bran is the outer coat — insoluble fibre, useful for stool bulk. Germ is the embryo — oil, protein, vitamin E, thiamin, folate and zinc. Swapping one for the other changes what you get almost entirely.
