Hydrate dry yeast at 38 to 42C. Hotter kills it, colder slows it. Keep salt off the dry yeast until the flour is mixed in, since direct contact draws water out of the cells.
Common myth
“Yeast in bread is a live culture that benefits the gut.” In reality: Baking kills the yeast at around 55 to 60C, long before the loaf is done. Nothing living reaches the plate. The probiotic yeast with actual trial evidence, Saccharomyces boulardii, is a different strain sold live as a supplement.
