Two hours in a low oven with nothing added at all, and they come out sweet enough to be suspicious.

Ingredients
- 4, sliced very thin (600g) Apples — Sliced 2mm or thinner, ideally on a mandolin. Thicker slices go leathery instead of crisp, however long you bake them.
- 3/4 tsp (3g) Ground Cinnamon — The only addition. There is no sugar here — drying concentrates what the apple already has.
- a squeeze Lemon — Tossed through to stop them browning in the two hours before they dry out.

Method
- Slice the apples as thinly as you can, core and all, and toss with lemon juice and cinnamon.
- Lay them in a single layer on lined trays with no overlap.
- Bake at 100°C for two hours, turning once, until they are dry and stiff.
- They crisp fully as they cool, so judge them cold, not hot.
