- a squeeze Lemon — The vitamin C brightens the flavour and stops the mashed avocado browning as fast.
- a few cracks Black Pepper — Piperine, the compound behind pepper’s bite, helps your body absorb more of the plant compounds in the avocado.

Method
- Toast the sourdough slices.
- Mash the avocado with the lemon juice and a pinch of salt.
- Fry or poach the eggs to your liking.
- Spread the avocado over the toast, top with the eggs, and finish with cracked black pepper.
