An egg baked into half an avocado. Two ingredients, one tray, no technique.

Ingredients
- 1 avocado, halved (200g) Avocado — Monounsaturated fat and potassium, and a shell that holds an egg perfectly once you widen the stone cavity.
- 2 eggs (100g) Eggs — Crack each into a small cup first — poured straight from the shell they overflow the hollow.
- snipped (5g) Chives — A sharp green finish on something very rich.

Method
- Heat the oven to 200C. Halve the avocado and scoop out a little extra flesh to widen the hollow.
- Sit the halves in a tin so they cannot tip, and slide an egg into each.
- Bake 14-16 minutes, until the whites are set.
- Season well and scatter the chives.
