Baked Pear with Ricotta

A dessert that is mostly fruit, and the only sugar in it came with the pear.

Ingredients
- 2, halved and cored (400g) Pears — Firm ones. A ripe pear collapses into sauce in the oven, which is a different and worse dish.
- 1/2 cup (120g) Ricotta — Spooned into the hollow after baking, not before — it dries out and goes grainy under heat.
- chopped (30g) Walnuts — Toasted in the oven alongside the pears for the last five minutes.
- 1 tbsp (15g) Honey — Half in the tray to catch the juices, half over the top at the end.
- 1/2 tsp (2g) Ground Cinnamon — Over the cut faces before they go in.

Method
- Halve and core the pears and set them cut side up in a dish.
- Dust with cinnamon, drizzle with half the honey, and bake at 190°C for 25 minutes.
- Add the walnuts to the tray for the last five minutes.
- Spoon ricotta into the hollows and finish with the rest of the honey.
