Ingredients
- 2 fillets (300g) Salmon — A 100g portion supplies roughly as much omega-3 as a standard fish oil capsule, often more, plus protein, vitamin D, and B12 a capsule doesn’t give you.
- 1 head (250g) Broccoli — Roasts alongside the salmon and adds vitamin C, vitamin K, and fibre to round out the plate.
- 2 small (250g) Sweet Potato — A slower-digesting carbohydrate than white potato, with beta-carotene the salmon’s fat helps you absorb.
- 2 cloves (6g) Garlic (Fresh) — Adds flavour to the vegetables with almost no calories.
- 1.5 tbsp Olive Oil — Coats the vegetables so they roast rather than steam, and carries the garlic’s flavour.
- 1/2 lemon Lemon — A squeeze over the finished salmon cuts through the richness of the fish.

Method
- Preheat the oven to 400°F (200°C).
- Toss the sweet potato and broccoli with olive oil, garlic, and a pinch of salt on a baking tray.
- Roast for 10 minutes, then push the vegetables to one side and add the salmon fillets to the tray.
- Bake for a further 12–15 minutes until the salmon flakes easily.
- Squeeze lemon over the salmon before serving.
