Beef Kofta with Yogurt

Spiced mince pressed onto skewers, with a cold yogurt sauce doing the cooling.

Ingredients
- 500g Beef Mince — Worked with the spices until slightly sticky — that is what makes it hold on the skewer.
- 3/4 cup (200g) Yogurt — The sauce, with garlic and lemon. Protein and calcium, and it cools the spice.
- 150g dry (350g cooked) Couscous — Boiling water, a lid, five minutes. The easiest carbohydrate there is.
- a handful, chopped (15g) Mint — Half in the kofta, half in the yogurt.
- 1/2 tsp (2g) Ground Cinnamon — Savoury cinnamon with beef is what makes this taste Middle Eastern rather than like a burger.

Method
- Mix the mince with the cinnamon, half the mint, salt and pepper, and knead it for a minute.
- Shape onto skewers and grill 6-7 minutes, turning once.
- Stir the rest of the mint into the yogurt with a crushed garlic clove and lemon.
- Pour boiling water over the couscous, cover five minutes, and fork it through.
