Berry Compote Porridge

Five minutes of simmered berries turns plain porridge into something worth getting up for.

Ingredients
- 1 cup dry (420g cooked) Oats — The base. Rolled oats hold their texture; instant ones turn to wallpaper paste.
- 1 1/4 cups (300ml) Milk — Protein and creaminess.
- 1 cup (150g) Raspberries — Simmered with a splash of water until they collapse. Very high fibre, most of it in the seeds.
- 1 tbsp, ground (15g) Flaxseed — Plant omega-3 and lignans, stirred in at the end so the heat does not oxidise the oil.

Method
- Simmer the raspberries with a tablespoon of water for five minutes, crushing them with a fork.
- Cook the oats in the milk for eight minutes.
- Stir the ground flaxseed through the porridge and swirl the compote over the top.
