Grated apple soaked into oats overnight — the original overnight breakfast, and still the best one.

Ingredients
- 1 cup dry (340g soaked) Oats — Soaking softens them without heat, and the beta-glucan does its cholesterol work either way.
- 3/4 cup (200g) Yogurt — The soaking liquid and the protein, plus live cultures if you buy it unpasteurised after culturing.
- 1 apple, grated (150g) Apple — Grated with the skin on. Its pectin is the soluble fibre that makes the bowl set overnight.
- a small handful, chopped (25g) Almonds — Vitamin E and the only crunch in a bowl that is otherwise entirely soft.
- a splash (100ml) Milk — Loosens it in the morning — soaked oats always thicken more than you expect.

Method
- Stir the oats, yogurt and grated apple together.
- Cover and refrigerate overnight.
- Loosen with the milk in the morning and top with the almonds.
