Ingredients
- 2 rashers (60g) Bacon — Processed meat, eaten as a sometimes food. Cooked to properly crisp, because limp bacon ruins the whole sandwich.
- 2 thick slices, toasted (80g) Sourdough Bread — Structure. A soft bread collapses under a wet tomato.
- 2 large leaves (40g) Romaine Lettuce — Cold and crisp against hot bacon — the temperature contrast is half the appeal.
- 1 tomato, thickly sliced (80g) Tomatoes — Salt the slices and let them drain for five minutes, or the bread goes to pieces.
- 2 tsp (12g) Mayonnaise — Both slices, right to the edges.

Method
- Fry the bacon until crisp and drain it on paper.
- Toast the bread and spread it with the mayonnaise.
- Salt the tomato slices, pat them dry, then build: lettuce, bacon, tomato.
