Calamari with Rocket & Lemon

Squid is either cooked in two minutes or in forty. There is nothing in between.

Ingredients
- 350g, cleaned and scored Calamari — Very high protein, very low fat. Sear it for ninety seconds — at three minutes it turns to elastic.
- 3 handfuls (80g) Arugula — Peppery leaves under hot squid, which wilts them slightly.
- 1 lemon (30g) Lemon — Squeezed over the moment it leaves the pan.
- 2 potatoes, roasted in chunks (300g) Potato — Something starchy to make it dinner rather than a starter.
- 1 1/2 tbsp (20g) Olive Oil — A very hot pan and a little oil. Anything more and the squid poaches.

Method
- Roast the potato chunks at 200C for 35 minutes.
- Score the squid in a criss-cross and pat it completely dry.
- Sear in a smoking-hot pan for 60-90 seconds, until it curls and colours.
- Pile onto the rocket, squeeze the lemon over, and season heavily.
