Invented at a Hollywood restaurant at midnight out of leftovers, and it shows in the best way.

Ingredients
- 1 large, cooked and diced (200g) Chicken Breast — About 46g of protein across two servings, and the reason this is lunch rather than a side salad.
- 3 rashers, crisped (60g) Bacon — Crumbled, not sliced. It is here for salt and crunch in small hits, not as a slab.
- 2, boiled (100g) Eggs — Another 12g of protein, and the yolk softens a dressing that is otherwise quite sharp.
- 1, diced (120g) Avocado — The fat that makes the whole bowl satisfying. Add it last so it does not brown while you build.
- crumbled (50g) Blue Cheese — The dominant flavour, so use less than you think. It is also where most of the salt comes from.
- 1 head, chopped (200g) Romaine — Sturdy enough to hold this much on top of it. Soft leaves collapse under bacon and blue cheese.
- a handful, halved (120g) Cherry Tomatoes — The only acid in a very rich bowl.

Method
- Cook and dice the chicken, crisp the bacon, and boil the eggs.
- Chop the romaine and spread it across a wide bowl.
- Lay each ingredient in its own stripe across the top — the arrangement is the dish.
- Dress lightly and let people mix their own.
