Stuffed Dates with Almond Butter

Dessert-sweet, but the sugar arrives wrapped in fibre rather than on its own.

Ingredients
- 6 dates, pitted (80g) Dates — Very high in sugar, but it comes packaged with fibre and potassium, which is a different proposition to the same sugar in a sweet.
- 2 tbsp (30g) Almond Butter — Fat and protein in the middle of each date, which blunts how fast that sugar arrives.
- a small square, chopped (20g) Dark Chocolate — At 70% and up it brings flavanols and magnesium along with the flavour, unlike milk chocolate.
- 1/2 tbsp (5g) Sesame Seeds — A little calcium and a lot of crunch for almost no calories.

Method
- Split each date down one side and take the pit out.
- Spoon almond butter into the cavity.
- Press a piece of dark chocolate into the almond butter and pinch the date closed.
- Roll the open edge in sesame seeds and chill for ten minutes to firm up.
