Fig & Goat Cheese Bites

Halved figs, a spoon of goat cheese, six minutes under the grill.

Ingredients
- 6, halved (300g) Figs — One of the better fruit sources of calcium, and high enough in fibre that six of them is a real serving.
- a small log (80g) Goat Cheese — Tangy enough to hold its own against very sweet fruit. It softens under the grill rather than melting away.
- 1 tbsp (15g) Honey — A thin drizzle after they come out, not before — under the grill it burns.
- chopped (25g) Pistachios — The crunch, and the colour against the purple and white.
- a few leaves (2g) Thyme — Picked off the stem, over the top. It stops the plate being purely sweet.

Method
- Halve the figs and set them cut side up on a tray.
- Press a small spoon of goat cheese into each.
- Grill for five or six minutes until the cheese browns at the edges.
- Finish with honey, pistachios and thyme.
