Halloumi Fries

Cheese cut into chips and fried. There is no defending it nutritionally and it is very good.

Ingredients
- cut into batons (250g) Halloumi — Around 25g of protein per 100g, and a melting point high enough to fry without collapsing. Also very salty, which is the honest caveat.
- 3 tbsp (30g) Cornflour — A light dusting. It is what gives the outside a crust rather than just a browned surface.
- 1/3 cup (80g) Yogurt — With lemon and mint, as the dip. Something cool and sour is essential against this much salt and fat.
- a small handful (6g) Mint — In the yogurt.
- a handful of seeds (40g) Pomegranate — Over the top. Sharpness, and it makes the plate look like more than fried cheese.
- a squeeze Lemon — Over the fries as they come out of the pan.

Method
- Cut the halloumi into thick batons and pat them completely dry.
- Toss in cornflour until lightly coated.
- Shallow fry for a couple of minutes a side until deep gold, then drain on paper.
- Serve immediately with the mint yogurt and pomegranate — they go rubbery within minutes of cooling.
