Kohlrabi & Apple Slaw with Ham

Kohlrabi is the vegetable nobody buys, which is a shame, because raw it is better than cabbage.

Ingredients
- 2, julienned (300g) Kohlrabi — Crisp and faintly sweet, with more vitamin C than an orange and none of cabbage’s sulphur.
- 1, julienned (150g) Apple — Cut at the last minute or tossed straight into the lemon, or it browns while you are still chopping.
- thick cut, diced (120g) Ham — Diced rather than sliced, so it behaves as an ingredient in the slaw rather than sitting beside it.
- 1/3 cup (80g) Yogurt — The dressing base instead of mayonnaise — lighter, and its acidity suits the apple.
- 2 tsp (10g) Wholegrain Mustard — Into the yogurt. It is what stops the dressing tasting like plain yogurt on vegetables.
- 1/2, juiced (20g) Lemon — Keeps the apple pale and sharpens the whole bowl.
- 1 tbsp (8g) Poppy Seeds — Texture, and they look like they were meant to be there.

Method
- Julienne the kohlrabi and apple and toss immediately with the lemon juice.
- Whisk the yogurt and mustard together with salt and pepper.
- Fold the dressing, ham and poppy seeds through.
- Leave 10 minutes before eating — the kohlrabi softens very slightly and it is better for it.
