Lemon Garlic Chicken Thighs

Ingredients
- 8 thighs, skin on (700g) Chicken Thigh — Skin up and uncovered, so the fat renders and the skin crisps instead of steaming.
- 4 potatoes, in chunks (500g) Potato — They cook in the rendered chicken fat, which is the entire point of the tray.
- 2 lemons, halved (60g) Lemon — Roasted cut-side down until they caramelise, then squeezed over everything.
- 1 head, cloves separated (30g) Garlic (Fresh) — Roasted whole in their skins so they turn sweet and spreadable.
- 3 sprigs (5g) Rosemary — Tucked under the chicken so it flavours the fat.

Method
- Heat the oven to 200C. Toss the potatoes and garlic cloves with oil in a large tray.
- Sit the thighs on top, skin up, and salt the skin well.
- Add the lemon halves cut-side down and roast for 40 minutes.
- Squeeze the roasted lemon over the tray before serving.
