Masala Omelette

An omelette with actual flavour in it, which is more than can be said for most of them.

Ingredients
- 3 eggs (150g) Eggs — About 19g of protein and the whole structure of the dish.
- 1/2 small, diced fine (50g) Onion — Raw into the egg rather than softened first — it keeps a bite that a cooked onion loses.
- 1 small, diced (70g) Tomato — Deseed it. The jelly around the seeds is water, and water is what makes an omelette weep.
- a handful, chopped (8g) Coriander — Stirred into the raw egg, so it is through the whole thing rather than sitting on top.
- a pinch (1g) Ground Turmeric — Colour more than flavour at this quantity, and it needs the fat in the yolk to be absorbed at all.
- 1 small, chopped (8g) Green Chilli — The heat. Adjust it, but leaving it out entirely makes this a plain omelette with turmeric in it.

Method
- Beat the eggs with the turmeric, salt, onion, tomato, chilli and coriander all at once.
- Get the pan properly hot with a little oil, then pour it all in.
- Leave it alone for a minute, lift the edges to let raw egg run under, and fold once it is just set.
