Ostrich Steak with Greens

A red meat from a bird, leaner than chicken breast, and ruined by anything past medium rare.

Ingredients
- 2 steaks (350g) Ostrich Fillet — Red meat with less than 3g of fat per 100g and more iron than beef. That leanness is why it goes from perfect to grey in about a minute.
- sliced (200g) Mushrooms — Browned in the pan after the steaks, picking up everything they left behind.
- a large bag (200g) Spinach — Wilted at the last moment, in the same pan.
- 1 1/2 tbsp (25g) Butter — Spooned over the steaks in the last minute. Something this lean needs fat added from outside.
- 2 cloves, crushed (12g) Garlic — In the butter as you baste, not earlier — it would burn in the time the pan needs to be that hot.
- 1 tbsp (15g) Balsamic Vinegar — Into the pan at the end to make a quick sauce from the fond.

Method
- Bring the steaks to room temperature and dry them well.
- Sear in a very hot pan for about 2 minutes a side for medium rare, adding butter and garlic to baste at the end.
- Rest the meat 5 minutes — this is not optional on a cut this lean.
- Brown the mushrooms in the same pan, wilt the spinach through, then deglaze with the balsamic and pour over.
