Pea & Mint Dip

Ingredients
- 3 cups, frozen (400g) Green Peas — Frozen peas are picked and frozen within hours, which is why they are sweeter than most fresh ones in a shop.
- a handful (12g) Mint — Raw, into the blender. Cooked mint goes brown and loses everything.
- crumbled (60g) Feta — Half blended in for salt, half crumbled on top.
- 1, juiced (25g) Lemon — It keeps the colour bright as well as sharpening the flavour.
- 1 1/2 tbsp (25g) Olive Oil — Blended in, which is what makes it a dip rather than a purée.

Method
- Boil the peas for three minutes, then drain and cool them under cold water to keep the colour.
- Blend with the mint, half the feta, lemon juice and oil.
- Top with the remaining feta.
