Fried Plantain with Eggs

Ingredients
- 2, sliced (250g) Plantain — Use them yellow-black. Green plantain is a starch to be boiled; ripe plantain caramelises, which is the whole point here.
- 3 eggs (150g) Eggs — The protein against a plate that is otherwise entirely carbohydrate.
- 1, sliced (80g) Bell Pepper — Cooked in the same pan after the plantain, picking up the sugars left behind.
- 1/2, sliced (60g) Onion — With the pepper. Sweetness on sweetness, but it works because the eggs are savoury.
- 1 tbsp (15g) Coconut Oil — High smoke point and the regionally correct fat. Any neutral oil does the job.

Method
- Slice the plantain on a diagonal, about 1cm thick.
- Fry in the coconut oil over medium heat until deep gold on both sides, then lift out.
- Cook the pepper and onion in the same pan.
- Fry or scramble the eggs and serve everything together.
