Roasted Chestnuts
Recipes · Snack · Recipe, Typed Supps
The only nut that is mostly starch rather than fat, which makes it the lowest-calorie one by a distance.
Allergens and patterns
None of the fourteen major allergens. Fits: Halal, Kosher, Gluten-free.
Ingredients
- 500g Chestnuts — Around 200 calories per 100g against roughly 600 for almonds, because they are starch rather than oil. They also carry vitamin C, which no other nut does.
- a good pinch (5g) Sea Salt — Tossed through while they are still hot, when the shells are open and it can get in.

Method
- Cut a deep cross through the shell on the flat side of each chestnut. Skip this and they explode.
- Roast at 200°C for 20–25 minutes, until the shells peel back at the cross.
- Wrap them in a tea towel for five minutes — the steam is what loosens the inner skin.
- Peel while hot. Cold chestnuts are almost impossible to peel.
