Roast Pork with Apple

Ingredients
- 600g loin, skin scored Pork — Dry the skin and salt it an hour ahead if you want crackling rather than leather.
- 2 apples, in wedges (300g) Apple — Roasted alongside for the last 25 minutes until they collapse into a rough sauce.
- 3 potatoes, in chunks (400g) Potato — In the fat under the pork.
- 1/2 cabbage, shredded (300g) Cabbage — Fried hard in a little of the pork fat at the end.

Method
- Heat the oven to 220C. Salt the scored skin and roast for 20 minutes.
- Drop to 180C, add the potatoes, and roast 30 minutes.
- Add the apple wedges for the last 25 minutes.
- Rest the pork ten minutes while you fry the cabbage in a spoonful of the fat.
