Do not stir it. The crust on the bottom of the pan is the best part of the dish.

Ingredients
- 350g dry short-grain (700g cooked) White Rice — Short-grain, spread thin and left alone. It has to sit still to form the crust.
- 250g, shell on Prawns — Laid on top for the last five minutes. Longer and they seize.
- 300g, cleaned Mussels — They steam open in the pan and season the rice with their own liquor. Discard any that stay shut.
- 1 large, in strips (150g) Bell Peppers — Sweetness and vitamin C.
- a good pinch Saffron — Colour and aroma. Steep it in a little warm stock first or it never really releases.
- 2/3 cup, frozen (100g) Green Peas — Scattered over near the end for colour and a little sweetness.

Method
- Soften the pepper and onion in oil in a wide pan.
- Stir in the rice for a minute, add the saffron stock, and spread it flat.
- Simmer without stirring for 18 minutes.
- Add the mussels and prawns on top, cover, and cook 5-6 minutes more. Rest before serving.
