Seed Crackers with Cheese

Crackers made entirely of seeds — no flour at all — which is why they are mostly fat and fibre.

Ingredients
- 1 cup (120g) Sunflower Seeds — The bulk of the cracker, and a serious amount of vitamin E.
- 2/3 cup (80g) Pumpkin Seeds — Magnesium and zinc, and they give the cracker its snap.
- 5 tbsp (50g) Chia Seeds — The glue. Soaked in water they turn to gel, which is the only thing holding these together without flour or egg.
- 4 tbsp (40g) Sesame Seeds — Calcium, and they toast well in a long slow bake.
- to serve (100g) Cheese — Anything sharp. The crackers themselves are nutty and mild.
- 1 tsp (4g) Sea Salt — In the mix, since there is nothing else seasoning them.

Method
- Stir all the seeds with the salt and 300ml of water and leave 15 minutes until the chia has gelled.
- Spread as thinly as you can on a lined tray — thin is the whole difficulty here.
- Bake at 150°C for 30 minutes, score into squares, then turn and bake another 15.
- Cool completely on the tray before breaking apart. Serve with the cheese.
