Wheat protein, which sounds unappealing and behaves more like meat than anything else on the shelf.

Ingredients
- sliced (250g) Seitan — Around 25g of protein per 100g, which is more than most meat. It is pure gluten, so it is the one protein coeliacs cannot touch.
- 2 large (120g) Tortillas — Warmed first so they roll without splitting.
- shredded fine (150g) Red Cabbage — It stays crisp for days once dressed, which is why this wrap survives being made in advance.
- 1, grated (80g) Carrot — Sweetness in the slaw, and colour against the purple.
- 1/4 cup (60g) Yogurt — The slaw dressing, with the mustard. Lighter than mayonnaise and its acid keeps the cabbage bright.
- 2 tsp (10g) Mustard — Sharpness, and it stops the yogurt tasting of nothing.
- 1 tbsp (15g) Soy Sauce — For the seitan in the pan. It has very little flavour of its own and takes on whatever you give it.

Method
- Fry the sliced seitan in a hot pan with the soy sauce until it browns at the edges.
- Toss the cabbage and carrot with the yogurt and mustard.
- Warm the tortillas, layer in slaw then seitan, and roll tightly.
