Icelandic strained yogurt, which is essentially a soft cheese pretending to be a breakfast.

Ingredients
- 1 cup (200g) Skyr — Strained far harder than Greek yogurt, which is why it carries more protein per spoon than most desserts do per tub.
- a small handful (25g) Almonds — Toasted in a dry pan for three minutes, which changes them completely.
- 1/2 cup (75g) Blueberries — Colour and anthocyanins against a very white bowl.
- a thin drizzle Honey — Skyr is properly sour — this is the counterweight.

Method
- Toast the almonds in a dry pan until they smell nutty, then chop them roughly.
- Spoon the skyr into a bowl.
