Ingredients
- 3 eggs (150g) Eggs — Cooked low and slow. Scrambled egg is a custard, and heat is what ruins it.
- 2 slices, torn (50g) Smoked Salmon — Folded in off the heat so it warms rather than cooks, bringing omega-3 and vitamin D.
- a pinch, snipped (5g) Chives — Sharp green against soft egg and oily fish.
- 2 tsp (10g) Butter — The fat that keeps the curds soft. Oil works, but not as well.

Method
- Melt the butter in a cold pan, add the beaten eggs, and put it on a low heat.
- Stir constantly and take it off while it still looks slightly underdone.
- Fold through the salmon and chives off the heat, and eat immediately.
