Sweet Potato Toast

Slices of sweet potato through the toaster instead of bread. Sounds like a gimmick, works completely.

Ingredients
- 1 large, sliced lengthways (200g) Sweet Potato — Slice it about 8mm thick. Thinner and it burns before it softens; thicker and the toaster never cooks the middle.
- 1 1/2 tbsp (25g) Almond Butter — The fat that makes this a breakfast rather than a warm vegetable, and it helps you absorb the beta-carotene underneath it.
- 1/2 banana, sliced (70g) Banana — Potassium and enough sweetness that nothing else needs adding.
- 1 tbsp (8g) Chia Seeds — Scattered over the nut butter so they stick. Fibre and a bit of texture.

Method
- Slice the sweet potato lengthways, about 8mm thick.
- Toast the slices two or three times on the highest setting, until a knife goes through easily.
- Spread with almond butter and top with banana and chia.
