The soy evaporates and leaves a salty glaze welded onto the nut, which is far better than plain salted.

Ingredients
- 2 cups (300g) Almonds — The best nut source of vitamin E, and enough magnesium that a handful is a meaningful contribution.
- 2 1/2 tbsp (40g) Tamari or Soy Sauce — Tossed through the hot nuts as they come out of the oven, where it hisses off and leaves the salt behind.
- 1/2 tsp (2g) Chilli Flakes — Optional. With the tamari it makes them very hard to stop eating, which is the only argument against them.

Method
- Roast the almonds at 160°C for 12–15 minutes, until they smell toasted.
- Tip them straight into a bowl and pour the tamari over while they are still hot.
- Toss until the liquid has gone, then spread them out to cool and harden.
