Ingredients
- cubed (500g) Watermelon — About 92% water, and one of the better sources of lycopene — more per gram than a raw tomato.
- cubed (80g) Feta — The salt, and the reason the combination works at all.
- a handful, torn (8g) Mint — Torn rather than chopped, so it does not blacken.
- a small handful (40g) Black Olives — More salt, and they keep it on the savoury side of a fruit salad.
- 1 tbsp (15g) Olive Oil — A little over the top. It sounds odd on fruit and it ties the plate together.

Method
- Cube the watermelon and drain off any pooled juice.
- Scatter the feta, olives and mint over.
